Vegetarian Tacos With Nectarine Tequila Swizzle By Drinking With Chickens
When we first heard that our partner, Drinking with Chickens, was combining lentils and nectarines for her Exotico + tacos post, we were intrigued. This unique pairing did not disappoint.
A vegetarian combination of walnuts, lentils, soy sauce and spices gives you all the taco flavor you need, and the nectarine slaw adds a just-right level of tangy sweetness.

INGREDIENTS:
Spiced Nectarine Slaw
- 2 cups of Purple Cabbage (Thinly Sliced)
- 2 cups Napa Cabbage (Thinly Sliced)
- 1 Nectarine (Thinly Sliced)
- 2 Anahiem Chilies
- 1 Garlic Clove (Finely Chopped)
- 2 tablespoons of Olive Oil
- 2 tablespoons of fresh Lime Juice
- 2 tablespoons of Nectarine Simple Syrup
- Red pepper flakes to taste
Spicy Walnut-Lentil Tacos
- 2 cups of Walnuts (Toasted)
- 1 tablespoon of Soy Sauce
- 2 cloves of Garlic (roughly chopped)
- 1 tablespoon of Ground Cumin
- 2 tablespoons of Chili Powder
- 2 tablespoon of Apple Cider Vinegar
- 1 ½ cups of cooked Brown Lentils
- Crunchy Taco Shells
- Crumbled Feta cheese
- Sliced Anaheim Chilies
- Course Sea Salt
- Lime Wedges
Spicy Nectarine Tequila Swizzle
- 3 oz. Fresh Squeezed Orange Juice (pulp strained)
- 2 oz. Exotico® Reposado Tequila
- 1 oz. Nectarine Simple Syrup
- 5 drops Orange Bitters
- 7 Nectarine Slices (Thinly Sliced. 3 for garnish, 5 for muddling in drink)
- 5 Anaheim chilies (Thinly Sliced. 2 for garnish, 3 for muddling in drink)
INSTRUCTIONS:
Spiced Nectarine Slaw
- Mix sliced cabbage, nectarine, and chilies in a medium bowl and set aside.
- Combine garlic, olive oil, lime juice, simple syrup, and red pepper flakes.
- Whisk thoroughly then pour over slaw mixture and toss to combine.
Spicy Walnut-Lentil Tacos
- In a food processor, pulse walnuts a few times until they are finely ground.
- Add soy sauce, garlic, cumin, chili powder, and vinegar.
- Add lentils and process till mixture is crumbly and resembles taco meat.
- Warm the taco shells in the oven.
- Layer meat, slaw, and a few slices of chilies in the taco shell.
- Top with a sprinkle of feta and sea salt to taste.
- Squeeze lime over contents.
*If you don’t plan on eating the meat right away, store in an airtight container in fridge until ready to use. (Good for up to a week). If meat seems too dry, sprinkle a bit of water on it as you mix it.
Spicy Nectarine Tequila Swizzle
- Muddle 3 chili slices, 4 nectarine slices, and bitters in the bottom of a highball glass.
- Add simple syrup and tequila to the mixture.
- Fill glass with crushed ice.
- Add orange juice and give contents a quick stir.
