Pineapple Margarita and Shrimp Tacos By Tipsy Gypsy

The sweet and tart flavors of this margarita perfectly complement the smoky notes of our aged Exotico® Reposado Tequila. Paired with shrimp marinated in tequila, taco seasoning and coconut liqueur, it’s like a tropical dream.
INGREDIENTS:
Margarita
- 1 ½ oz. Exotico® Reposado Tequila
- ¾ oz. Fresh Lime Juice
- 4 Wedges Grilled Pineapple
- ½ Small to Medium Jalapeño, Smoked
- ½ oz. Agave Nectar
Taco Recipe
- 20 Small Shrimp
- 1 ½ oz. Exotico® Reposado Tequila
- Taco Seasoning
- Coconut Liqueur
- ½ oz. Small to Medium Jalapeño, Smoked
- 5 Wedges Grilled Pineapple
- Coleslaw Mix
- Cilantro Lime Dressing
- Corn Tortillas
INSTRUCTIONS:
- Marinade the shrimp in Exotico® Reposado Tequila, coconut liqueur and taco seasoning for 20 minutes.
- Cook in a skillet on medium heat until opaque (about 5-7 minutes).
- Cut the jalapeño and smoke it with hickory chips using a smoking gun.
- Let it sit covered until the smoke is gone.
- Chop up and add to coleslaw mix.
- Grill pineapple until charred, chop up, and add to coleslaw mix.
- Add dressing to mix and stir.
- Add the slaw and the shrimp to your corn tortillas.
